This sake is very aromatic. Clean and rounded on the nose, with a complex bouquet of aromas. Creamy rice, banana, and fresh cheese feature first, followed by an appearance of fruit like melon, pear, Asian pear, and green apple. The palate is very smooth, opening up with lively fruit and bold acidity: more banana, apple, fresh cheese. This is quickly followed by robust umami flavors of mushrooms and chestnuts. Though the body is rather full and bold, the acidity keeps the mouthfeel refreshing, and the umami keeps the palate medium-dry overall.
