Tasting Notes
Deep ruby-purple with bold aromatics of crème de cassis, wild blackberry, espresso bean, and subtle graphite. Full-bodied, lush, and broad on the palate, layering ripe dark fruit and dark chocolate over fine-grained, cocoa-powder tannins with a long, fresh finish.
Producer Notes
The 2021 Adaptation Cabernet Sauvignon leads with a heady aromatic rush of lilac, blackcurrant, ripe raspberry, vanilla, and clove. The palate reveals flavors of blackberry cobbler, fig, and raw almond packed around a tight-knit core of soft tannin. The judicious use of new French oak lends structure while adding a flash of espresso and cedar through a luxurious finish.

Deep purple-hued, with great aromatics of cassis, graphite, mint, and tobacco, the 2021 Cabernet Sauvignon is medium to full-bodied and concentrated, showing a focused, elegant mouthfeel, classic 2021 tannins, and a great finish. It will benefit from 2-4 years in the cellar and keep for 15+.
Coming mostly from the Oso Vineyard in Pope Valley, but with fruit from sites throughout the Valley, the 2019 Cabernet Sauvignon is 80% Cabernet Sauvignon, 18% Merlot, and 2% Petite Sirah that spent 18 months all in French oak. Red and black fruits, spicy herbs, chocolate, and hints of leather all shine here, and it’s medium to full-bodied, with a round, layered mouthfeel, some classic 2019 opulence, and velvety tannins. The 2019 Cabernet Sauvignon Adaptation is a rich, bombastic wine from vineyards in Pope Valley. Succulent dark cherry, plum, mocha, spice, new leather and tobacco are front and center. The 2021 Cabernet Sauvignon Adaptation is a blend of seven different vineyards across the valley, from mountain sites and valley floor sites. Savory and floral notes lead into a core of dark red/purplish fruit. This bold, savory Cabernet Sauvignon packs a pretty serious punch with its mid-weight frame. Best of all, this is a terrific wine for the money.
A subsidiary label from Odette, Adaptation has produced an easy-drinking 2021 Cabernet Sauvignon, featuring scents of cedar bark and charry oak framing notes of cassis and redcurrants. It's medium to full-bodied, supple, ripe and creamy-textured, finishing with softly dusty tannins and bright red berries. A blend of 77% Cabernet Sauvignon, 22% Merlot and 1% Malbec, it matured 18 months in 50% new French oak (with the balance being in second-use barrels). It's a solid value in the context of Napa Valley Cabernet.
