Tasting Notes
Pale straw yellow with subtle greenish highlights. The aromatics are crisp, refined, and mineral-driven, opening with aromas of green apple, lemon peel, white peach, and orange blossom, underscored by a signature wet-stone volcanic smoke. On the palate, it is vibrant and precise, showing brilliant acidity, high tension, and a lean, saline-tinged mineral finish.

This sleek, minerally white is well-cut and refreshing, with flavors of plump white cherry, lemon oil, spun honey and chamomile that expand on the palate, underscored by lingering notes of minerally smoke and salt on the spiced finish. Drink now through 2027. 7,582 cases made, 2,667 cases imported.
At 46% alcohol by volume, the saffron-spiked red label version is strong (but not as strong as the overproof blue label version). This is an intriguing, old style of gin, with a fairly yellowish tinge and light, earthy flavors that wind into a complex, spicy finish marked by hints of black pepper, anise and cassia bark. Best when served very cold.
