With another two or three years of bottle age, I'm betting that the Canava Chrissou - Tselepos 2025 Santorini Assyrtiko Vieilles Vignes will be even better. At this youthful stage, it already offers a textbook expression of Santorini Assyrtiko, opening to delicate aromas of chamomile, elderflower, apple blossom, quince and pear with hints of underripe nectarine. The wine shows more flesh and generosity than many of its peers, combining a creamy texture and soft richness with vibrant freshness and a long, saline finish marked by subtle mineral notes. Produced in 6,000 bottles from basket-trained vines between 50 and 100 years old in the villages of Pyrgos, Emporeio and Megalochori, the wine draws on some of Santorini's most important vineyard areas. Rooted in volcanic soils rich in pumice and ash, it spends three months on its fine lees before bottling. Elegant and complete even now, it appears to have a long runway ahead.
