About This Wine
Tasting Notes
Vibrant ruby-purple in color. Intensely aromatic on the nose with notes of ripe black raspberry, crushed wild thyme, rosemary garrigue, black pepper, and subtle pine needle freshness. Medium-to-full-bodied and generous on the palate, combining the dark fruit structure of Cabernet Sauvignon with the spicy, juicy blackberry flavors of Syrah and Grenache, supported by supple tannins and a crisp, herbaceous finish.
Producer Notes
Located in Aragon near Carcassonne in the high foothill slopes of the Montagne Noire, Domaine de Cabrol sits in the unique Cabardès appellation where Atlantic and Mediterranean climatic influences overlap. Winemaker Nicolas Carayol farms 21 hectares of vines surrounded by 100+ hectares of wild garrigue and pine forest. The winery eschews oak aging for this cuvée, utilizing gravity-flow vinification and concrete tanks to express the raw, savory purity of its high-elevation terroir.
