Bright pale straw with shimmering green highlights. Intensely aromatic on the nose, delivering vibrant notes of fresh lime zest, white peach, crushed flint, lemongrass, and subtle white flowers. Crisp, medium-bodied, and mouthwatering on the palate, offering juicy flavors of grapefruit, green apple, and damp stone minerality, all framed by a tight acid spine that leads into a long, chalky, and refreshing finish.

Located in Tracy-sur-Loire, Domaine Jean Pabiot et Fils has been a family-owned estate for five generations, currently managed by Alain Pabiot and his daughter Pauline. The estate covers 30 hectares across 20 distinct terroir parcels, centered heavily on 'fines caillottes'—a dry, stony limestone soil mix that imparts extraordinary mineral precision and freshness to Sauvignon Blanc. Vinified entirely in temperature-controlled stainless steel with line-drawn lees aging and no oak influence, the winemaking emphasizes varietal purity, crisp acidity, and the signature flinty character (pierre à fusil) of Pouilly-Fumé.
