Producer Notes
Former Germain-Robin apprentice Crispin Cain starts with an old recipe for apple-honey mead and distills it by hand in small batches on the original Germain-Robin antique cognac still. Crispin macerates select herbs: rose geranium, lemon balm, wormwood, hyssop, lemon verbena, star anise, fennel seed, and lemon peel, among others. He carefully distills the brandy with the herbs. Subtle, complex and absolutely beautiful. The honey gives it a beautiful presence.

Rated Five Stars in 2009. Next incarnation. Pewter/tarnished silver tint; very good clarity. Lots of menthol, woodsy, forest floor, earthy appeal in the opening nosing passes , plus ethanol, furniture polish, make-up remover, plastic, deeply herbal fragrances; secondary sniffs echo the findings of the early round, adding only candle wax, kiwi, lychee. Entry is zesty , keenly peppery, tangy, herbaceous; mid-palate highlights soy bean, black pepper, spearmint, dill, basil, parsley, grassy tastes. I like this absinthe's manageable is well below the traditional 65-68% level.
From a base of distilled apple-honey mead, this absinthe is absolutely delicious. Spicy with subtle sweetness; persistent anise with sweeter notes and hints of citrus. A quiet floral bouquet sings in the finish. (“You can learn a lot of things from the flowers, for especially in the month of June…”) Nice heat all the way through.
