Tasting Notes
Crystalline and precise with intense aromas of green apple, lemon zest, white flowers, and oyster shell. Crisp and electric on the palate with chalky minerality, vibrant acidity, and a long, saline-driven finish.
Producer Notes
Sourced from two 50+ year-old parcel sites (Semon and Paradis) sitting directly above an abandoned limestone quarry in Chichée, where paper-thin topsoil yields intensely mineral and saline Chablis.

The 2021 Chablis Au Dessus des Carrières comes from two parcels planted mainly in the seventies. Vibrant again on the nose, this offers enticing scents of yellow plum, flint and subtle petrichor scents that unfurl in the glass. The palate is well balanced with fine depth, perhaps a little more linear than the Vieilles Vignes with a very focused finish. Excellent. Chablis like a Swiss watch! (Neal Martin)
The 2023 Chablis Au Dessus des Carrières was bottled a couple of weeks prior to my visit after 12 months on the lees and a fermentation that was strung out over 12 months! It has an exquisite, beautifully defined and focused bouquet surfeit with minerals. The palate is very precise, poised, saline and tangy, with a dab of iodine toward the finish. The 2023 is excellent. 91-93 points.
A standout performer, Picq’s 2023 Chablis Dessus la Carrière, sourced from two parcels planted between 1970 and 1973, unfurls in the glass with oceanic notes of oyster shell and warm stones mingled with lemon confit, peach and pear. On the palate, it is medium- to full-bodied and concentrated yet tensile, laden with mouthwatering acidity and with a crisp core of fruit, before concluding in a long, saline finish. It merits purchase by the case.
At the moment, the 2022 Chablis Au Dessus des Carrières is stoic on the nose compared to Picq's other cuvées, despite both of us giving our glasses vigorous swirls. The palate is where the action is: great concentration and depth, hints of white peach and nectarine, the power loaded at its back end. Give this two or three years in bottle.
The 2022 Chablis Au Dessus des Carrières was still showing a touch of reduction on the nose despite having been opened the previous afternoon. It unfolds with dried honey, undergrowth, white asparagus and hints of white truffle–quite distinctive. The palate is well balanced with a tangy opening, plenty of extract here, almost resinous in texture with a dash of spice box on the finish. I would afford this 2-3 years in bottle. (Neal Martin)
The 2024 Chablis Au Dessus des Carrières, which comes from the lieux-dits of Paradis and Champboisons, has a nuanced bouquet with yellow fruit, beeswax and light flinty scents. The palate is quite animated at this stage, with fine tension, salinity and a twist of sour lemon on the finish. This has good potential.
