This cocktail-friendly absinthe is mild and herbaceous, hinting at fennel, lime peel, and a fresh hint of celery. Made with beet neutral spirits, it has a faint sweetness that plays around the edges. Light straw in the glass, louching to bright opalescent.

Last reviewed in 2010/Four Stars. Color is misty yellow/green; impeccably sediment free. First whiffs detect an entire warehouse of exotic aromas, including bison grass, wormwood, spring onion, candle wax, glue, hysop, lemon balm, and star anise fruit; after another seven minute span of air contact, the bouquet turns as mineral like as it is herbal/woodsy. Entry is concentrated, highly complex, searing on the tongue at first, yet agile and focused as the alcohol heat fades, leaving behind layers of fennel, licorice, coriander, and mind; midpalate mirrors the entry, but maintains a lower profile heat-wise, allowing the botanical mix to shine unencumbered. Finish is long, peppery, zesty, deeply herbaceous.
