The Tomio Hanaichirin sake is produced in Kyoto, the former imperial capital of Japan. Kyoto has medium hard water, which allows the sakes of the region to have the “feminine” characteristics of being mildly fragrant, soft and slightly sweet. A rich offering, I found the Tomio to be thick and complex, with rich muskmelon tones and a nice warm finish. Most Ginjo level sakes have some sweetness, but this is slightly drier (+1 SMV). Enjoy this sake lightly chilled.
