Look for a mild, almost neutral scent in this small-batch gin, with just a hint of lemon peel. The soft palate hints at pine, lavender, and lemon, finishing long and gentle.

Spring water transparent; clean as a whistle. In the first whiffs after the pour, the early aroma features cucumber, dried violets, angelica, black pepper, and soft juniper; later inhalations encounter more of the floral scents as well as juniper but less of the other spices and botanicals. Entry is a little prickly at first, but that rounds off leaving behind tastes of pine, tree sap/resin, thyme, white pepper; midpalate sees a bit of the alcohol prickliness return to prod the taste buds awake. Finishes low-key, zesty, juniper-like, and a touch too minerally. I see potential here.
